Carrot Cake Recipe – Super Rich, Moist and Flavorful
My ideal carrot cake is dense, rich and full of flavor. This recipe is perfect topped off with my Cream Cheese Swiss Buttercream.

  1. pre-heat oven to 350°F
  2. Grease and flour two 8″ cake pans and put a parchment circle in the bottom of the pan
  3. In a medium bowl, combine flour, baking soda, salt and spices; set aside
  4. In large bowl, combine sugar, brown sugar, oil, vanilla and eggs; beat well
  5. Stir in flour mixture: mix well
  6. Stir in carrots, pineapple, raisins, currants, coconut and pecans
  7. pour batter into pans
  8. Bake at 350° for approximately 40 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes in pan then turn out onto a wire rack to cool completely.
