Sweet Coconut Rice
Sweet, nutty, salty delicious rice that can be used in dessert sushi or just eaten alone with some fresh fruit. I love it for breakfast!

Coconut Cream Sauce

Rice
  1. Combine the coconut milk and water in a medium sauce pan and bring to a boil
  2. Add rice, stir once and let it come back to boil. As soon as it starts boiling reduce heat to low and cover. Cook for 20 minutes without removing the lid
  3. After 20 minutes remove from heat. Stir and let cool for 5 minutes. Add coconut cream sauce and mix well. Put lid back on and let sit for 15 minutes. Transfer to shallow bowl or dish and set in refrigerator, uncovered until cool.
Coconut Cream Sauce
  1. While the rice is cooking, make your coconut cream sauce
  2. combine coconut cream, sugar and salt in small pan. Warm on low heat until the sugar has dissolved.
  3. Reserve 1/4 cup for dipping sauce. The rest will be added to your rice when it is done cooking.
